Ingredients

Equipment

  • small saucepan
  • whisk
  • measuring cups
  • measuring spoons
  • bowl or tall container
  • milk frother

Method

  1. Brew the chai tea and set it aside. If you prefer a stronger flavor, steep it a little longer than usual.
  2. In a small saucepan over medium-low heat, whisk together the chai tea, milk, pumpkin puree, caramel sauce, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt.
  3. Heat gently until steaming and well combined, whisking often. Do not let it boil.
  4. Taste and adjust sweetness or caramel as needed, then pour the latte base into a glass filled with ice.
  5. To make the pumpkin cold foam, combine the heavy cream or half-and-half, milk or cream, pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract in a bowl or tall container.
  6. Froth with a milk frother, whisk, or handheld mixer until thick, creamy, and lightly airy.
  7. Spoon or pour the pumpkin cold foam over the iced latte.
  8. Drizzle with additional caramel sauce and serve immediately.

Notes

For a sweeter latte, add more caramel sauce or maple syrup to taste. Half-and-half can be used instead of heavy cream for a lighter foam, and the drink can be served warm by skipping the ice.
