Method

  1. Place the eggs in a medium saucepan and cover with cold water. Bring the water to a boil over medium-high heat, then reduce the heat to low and let simmer for 10 minutes.
  2. While the eggs cook, heat a skillet over medium heat and cook the bacon slices until crispy, about 5-7 minutes. Remove the bacon and place it on a paper towel-lined plate to cool, then crumble it into small pieces.
  3. Once the eggs are done, transfer them to a bowl of ice water to cool for about 5 minutes. Peel the eggs once cooled.
  4. Slice each egg in half lengthwise and carefully scoop out the yolks into a mixing bowl. Arrange the egg white halves on a serving platter.
  5. Mash the egg yolks with a fork until smooth. Add mayonnaise, Dijon mustard, white vinegar, paprika, salt, and ground black pepper to the yolks. Mix until creamy and well combined.
  6. Spoon or pipe the yolk mixture back into the egg white halves, dividing it evenly among all the eggs.
  7. Sprinkle the crispy bacon crumbles over the top of the filled eggs. For added flavor and presentation, garnish with a light dusting of paprika and optional fresh parsley.
  8. Serve immediately or refrigerate until ready to serve.

Notes

For best results, use fresh eggs and cook the bacon until extra crispy. You can substitute smoked paprika for regular paprika for a deeper flavor.
