Equipment

  • large skillet
  • slow cooker
  • two forks
  • broiler
  • tongs

Method

  1. Heat the olive oil in a large skillet over medium-high heat. Season the roast with salt and black pepper, then sear it on both sides until browned, about 2 to 3 minutes per side.
  2. Place the seared roast in the crockpot. Sprinkle the au jus gravy mix, dry onion soup mix, garlic powder, and dried thyme over the meat.
  3. Pour in the beef broth and Worcestershire sauce. Cover and cook on LOW for 8 to 10 hours, or until the beef is very tender and shreds easily.
  4. Remove the beef from the crockpot and shred it with two forks. Return the shredded beef to the juices in the crockpot and stir to coat.
  5. If using cheese, split the rolls and top the bottom halves with beef and cheese. Place under a broiler for 1 to 2 minutes, just until the cheese melts.
  6. Spoon the beef onto the rolls, serve warm, and use the crockpot juices as a dipping sauce on the side.

Notes

For extra flavor, toast the rolls lightly before assembling. If the cooking liquid seems too salty, add a little more beef broth when serving. The beef can also be kept warm in the crockpot until ready to serve.
