Method
- If the dates are dry, soak them in warm water for 5 to 10 minutes, then drain well.
- Add the dates, rolled oats, protein powder, nut butter, chia seeds, ground flaxseed, vanilla extract, and salt to a food processor.
- Pulse until the mixture becomes sticky and crumbly, scraping down the sides as needed.
- If the mixture seems too dry to hold together, add 1 tablespoon of water at a time and pulse again until it sticks when pressed.
- Taste and add honey or maple syrup if you want a sweeter flavor, then pulse briefly to combine.
- Scoop out about 1 tablespoon of mixture at a time and roll into balls with your hands.
- If desired, roll the balls in mini chocolate chips or shredded coconut.
- Place the balls on a plate or tray and chill in the refrigerator for at least 20 minutes before serving.
Notes
Store the protein balls in an airtight container in the refrigerator for up to 1 week. For a nuttier flavor, use almond butter; for a sweeter snack, add the optional honey or maple syrup.
