Equipment

  • food processor
  • mixing bowl
  • measuring cups and spoons
  • baking sheet
  • plate

Method

  1. If the dates are dry, soak them in warm water for 5 to 10 minutes, then drain well.
  2. Add the dates, oats, protein powder, almond butter, chia seeds, flaxseed, cinnamon, and salt to a food processor.
  3. Pulse until the mixture starts to clump together and looks sticky. If it is too dry, add water 1 tablespoon at a time and pulse again.
  4. Scoop out about 1 tablespoon of the mixture and roll it into a ball with your hands. Repeat with the remaining mixture.
  5. If desired, roll the balls in mini chocolate chips or shredded coconut to coat.
  6. Place the protein balls on a plate or baking sheet and chill for 15 to 20 minutes before serving.

Notes

If the mixture is too sticky to roll, chill it for a few minutes before shaping. Store the finished protein balls in an airtight container in the refrigerator for up to 1 week or freeze for longer storage.
