Method
- Line a small baking sheet or plate with parchment paper.
- In a bowl, mix the yogurt with honey or maple syrup and vanilla extract, if using. Fold in the diced strawberries.
- Spoon small mounds of the strawberry yogurt mixture onto the parchment-lined baking sheet, keeping them bite-sized and spaced apart.
- Freeze the yogurt bites until solid, about 2 to 3 hours.
- Once frozen, melt the chocolate with the coconut oil in a microwave-safe bowl in 20- to 30-second intervals, stirring until smooth.
- Dip each frozen yogurt bite into the melted chocolate using a fork or spoon, coating it as much as desired, then return it to the parchment paper.
- Sprinkle with a little flaky salt if desired, then freeze for 10 to 15 minutes more until the chocolate is set.
- Serve immediately or store in an airtight container in the freezer until ready to enjoy.
Notes
For the easiest dipping, make sure the yogurt bites are fully frozen before coating them in chocolate. You can use either honey or maple syrup for sweetness, or leave it out for a tangier bite. Store leftovers in the freezer in an airtight container with parchment between layers.
