Method
- Preheat the oven to 350°F (175°C). Line a large pizza pan or baking sheet with parchment paper.
- Press the sugar cookie dough evenly into a 12-inch circle on the prepared pan to form the crust.
- Bake for 12 to 15 minutes, or until the edges are lightly golden and the center is set.
- Remove from the oven and let the crust cool completely on the pan.
- In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the whipped topping until the mixture is light and fluffy.
- Spread the cream cheese mixture evenly over the cooled cookie crust.
- Arrange the blueberries in the upper left corner to create the stars section of the flag.
- Place the sliced strawberries in rows across the rest of the pizza to resemble red stripes, leaving a little space between rows if desired.
- Add raspberries in alternating rows or along the stripes for extra red color and a festive look.
- If using, warm the honey or apricot preserves slightly and brush a very thin layer over the fruit for a glossy finish.
- Chill the fruit pizza for at least 30 minutes before slicing and serving.
Notes
For easier slicing, make sure the cookie crust is completely cool before adding the filling. You can substitute strawberries or raspberries with other red berries if desired, and the glaze is optional for added shine.
