Equipment

  • mixing bowl
  • spatula
  • 8x8-inch baking pan
  • parchment paper
  • measuring cups

Method

  1. Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, mix the oats, protein powder, and salt until evenly combined.
  3. Add the peanut butter, honey or maple syrup, milk, and vanilla extract. Stir until the mixture starts to clump together.
  4. If the mixture seems too dry, add a little more milk, 1 tablespoon at a time, until it holds together when pressed.
  5. Fold in the mini chocolate chips.
  6. Transfer the mixture to the prepared pan and press it down firmly and evenly with the back of a spoon or your hands.
  7. Chill in the refrigerator for at least 1 hour, or until firm.
  8. Lift the bars out using the parchment overhang and cut into 8 bars.

Notes

For firmer bars, chill them a little longer before slicing. If the mixture is too dry, add milk gradually; if it feels too sticky, add a small spoonful of oats or protein powder. Store bars in an airtight container in the refrigerator.
