Method

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, sugar, cinnamon, nutmeg, and ginger. Stir until the mixture is smooth and well blended.
  3. Pour the pumpkin mixture into the prepared baking dish and spread it evenly.
  4. Sprinkle the dry yellow cake mix evenly over the pumpkin mixture, covering the entire surface.
  5. Drizzle the melted butter evenly over the top of the cake mix, ensuring most areas are covered.
  6. If desired, sprinkle chopped pecans over the top for added texture and flavor.
  7. Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the edges are set.
  8. Allow the cake to cool for at least 15 minutes before serving. Serve warm or at room temperature, optionally topped with whipped cream or vanilla ice cream.

Notes

For a nut-free version, omit the pecans. You can also substitute pumpkin pie spice for the cinnamon, nutmeg, and ginger.
