Ingredients

Equipment

  • 12-cup muffin tin
  • mixing bowl
  • measuring spoons
  • pastry brush
  • oven

Method

  1. Preheat the oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with nonstick cooking spray.
  2. Flatten each biscuit into a 4 to 5 inch round and press one into each muffin cup, making sure the dough comes up the sides to form a cup.
  3. Spoon about 1 tablespoon of pizza sauce into each biscuit cup.
  4. Add a small handful of mozzarella cheese and a few mini pepperoni slices to each cup.
  5. In a small bowl, mix the melted butter, minced garlic, Parmesan cheese, and Italian seasoning.
  6. Brush or drizzle the garlic butter mixture evenly over the tops of the filled biscuit cups.
  7. Bake for 14 to 18 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
  8. Remove from the oven and let the pizza cupcakes cool in the pan for 5 minutes before serving.
  9. Sprinkle with chopped parsley if desired and serve warm.

Notes

For extra flavor, add a pinch of red pepper flakes or swap the pepperoni for cooked sausage, olives, or diced bell peppers. Serve warm for the best texture.
