Equipment

  • mixing bowl
  • spoon or spatula
  • small cookie scoop
  • baking sheet
  • parchment paper

Method

  1. In a medium bowl, combine the almond flour, protein powder, shredded coconut, chia seeds, ground flaxseed, sweetener if using, and salt.
  2. Add the peanut butter, vanilla extract, and 2 tablespoons of almond milk. Stir until a thick dough forms. If the mixture is too dry, add more almond milk 1 teaspoon at a time.
  3. Use your hands or a small cookie scoop to portion the mixture, then roll it into 12 to 14 bite-sized balls.
  4. Place the protein balls on a plate or baking sheet lined with parchment paper.
  5. Refrigerate for at least 20 minutes to firm up before serving.
  6. Store leftovers in an airtight container in the refrigerator.

Notes

If the mixture feels too dry, add almond milk gradually until it holds together. Swap peanut butter for almond butter if preferred, and adjust sweetness to taste.
