Equipment

  • mixing bowl
  • baking sheet
  • parchment paper or foil
  • oven
  • spoon

Method

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. In a medium bowl, mix the softened cream cheese, cheddar cheese, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Spoon the cheese mixture evenly into each jalapeno half, filling them generously.
  4. Wrap each stuffed jalapeno with a half-slice of partially cooked bacon, securing it around the filling.
  5. Arrange the poppers seam-side down on the prepared baking sheet.
  6. Bake for 20 to 25 minutes, or until the bacon is crisp and browned and the jalapenos are tender.
  7. If desired, broil for 1 to 2 minutes at the end for extra bacon crispness, watching closely to prevent burning.
  8. Let cool for a few minutes before serving. Garnish with chopped chives or green onions if desired.

Notes

For less heat, remove all seeds and membranes from the jalapenos. Partially cooking the bacon helps it crisp up in the oven without overcooking the peppers.
