Equipment

  • mixing bowl
  • spoon
  • refrigerator
  • baking sheet
  • measuring cups

Method

  1. In a medium bowl, combine the rolled oats, ground flaxseed, mini chocolate chips, and salt.
  2. Add the peanut butter, honey, and vanilla extract. Stir until the mixture is evenly combined and sticky.
  3. If the mixture feels too dry, add 1 to 2 teaspoons more honey or peanut butter. If it feels too wet, add a little more oats.
  4. Cover the bowl and refrigerate for 15 to 20 minutes to help the mixture firm up.
  5. Scoop out about 1 tablespoon of mixture at a time and roll into balls with your hands.
  6. Place the energy balls on a plate or baking sheet and refrigerate for at least 15 minutes before serving.
  7. Store in an airtight container in the refrigerator.

Notes

If the mixture is difficult to roll, chill it a little longer before shaping. For a sweeter snack, add a few extra mini chocolate chips, or swap them for dried fruit if desired.
