Ingredients

Equipment

  • small saucepan
  • whisk
  • fine mesh strainer
  • glass
  • handheld frother

Method

  1. In a small saucepan, bring the water to a simmer over medium heat. Add the chai tea bags or loose-leaf chai and steep for 5 minutes, then remove the tea bags or strain the tea.
  2. Stir in the pumpkin purée, 1/2 cup milk, maple syrup or honey, pumpkin pie spice, vanilla extract, and a pinch of salt. Whisk until smooth and warm, then simmer gently for 1 to 2 minutes without boiling.
  3. Remove the pan from the heat and let the tea cool slightly. Fill a glass with ice and pour the pumpkin chai over the ice.
  4. To make the cold foam, froth the remaining 1/2 cup cold milk until thick and foamy using a handheld frother, blender, or whisk.
  5. Spoon the cold foam over the iced pumpkin chai. Sprinkle with a little extra pumpkin pie spice and garnish with a cinnamon stick, if desired.

Notes

For a sweeter drink, add more maple syrup or honey to taste. Oat milk, almond milk, or dairy milk all work well. If you want a stronger chai flavor, steep the tea a little longer before adding the pumpkin mixture.
