Ingredients

Equipment

  • large saucepan
  • wooden spoon
  • immersion blender
  • measuring cups and spoons
  • ladle

Method

  1. Melt the butter in a large saucepan over medium heat. Add the chopped onion and cook for 4 to 5 minutes, stirring often, until softened and translucent.
  2. Stir in the garlic and cook for 30 seconds, just until fragrant.
  3. Add the pumpkin purée, vegetable broth, milk or half-and-half, salt, pepper, cinnamon, nutmeg, smoked paprika, and maple syrup. Stir until smooth.
  4. Bring the soup to a gentle simmer, then reduce the heat to low and cook for 10 to 15 minutes, stirring occasionally, until heated through and slightly thickened.
  5. For a smoother texture, blend the soup with an immersion blender directly in the pot, or carefully transfer in batches to a blender.
  6. Taste and adjust seasoning with more salt or pepper if needed.
  7. Ladle the soup into mugs and top with a swirl of cream, toasted pumpkin seeds, and fresh thyme if desired. Serve warm.

Notes

For a richer soup, use half-and-half instead of milk. If you want a dairy-free version, substitute unsweetened oat milk or coconut milk and skip the cream garnish. The soup can be blended completely smooth or left slightly rustic.
