Method
- In a small bowl, whisk the eggs with milk, a pinch of salt, and black pepper.
- Cook the eggs in a lightly greased skillet over medium-low heat, stirring gently until softly scrambled and just set. Stir in the bacon, sausage if using, hash browns, and chives, then remove from the heat.
- Lay out the bread slices and place one slice of cheddar on two of them.
- Divide the breakfast egg filling evenly over the cheese, then top with the remaining cheddar slices and the other bread slices to form two sandwiches.
- Butter the outsides of each sandwich evenly on both sides.
- Heat a skillet or griddle over medium-low heat. Cook the sandwiches for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is deep golden brown and the cheese is melted.
- Let the sandwiches rest for 1 minute before slicing and serving warm.
Notes
For the best melt, keep the heat at medium-low so the bread browns slowly while the cheese fully melts. You can swap bacon for sausage, or omit the meat entirely for a vegetarian version.
