Ingredients

Method

  1. Prepare the ingredients by chopping the tomatoes, cucumber, bell peppers, and garlic.
  2. Soak the slices of stale bread in cold water for about 5 minutes, then squeeze out excess water.
  3. In a blender or food processor, combine the tomatoes, cucumber, bell peppers, garlic, and soaked bread. Blend until smooth.
  4. Gradually add the olive oil while blending to create a creamy texture.
  5. Add the sherry vinegar, salt, and pepper. Blend again to incorporate the flavors.
  6. Add cold water, a little at a time, until the gazpacho reaches your desired consistency.
  7. Taste and adjust seasoning as needed. Refrigerate the gazpacho for at least 1-2 hours to chill and allow the flavors to meld.
  8. Serve cold in bowls or glasses, garnished with chopped parsley or basil if desired.

Notes

For a smoother texture, strain the gazpacho through a fine mesh sieve after blending. Adjust the amount of water for your preferred consistency.
