Method

  1. Preheat your grill to medium-high heat and lightly oil the grates.
  2. In a small bowl, mix together olive oil, chili powder, paprika, garlic powder, cumin, salt, and black pepper to create a marinade.
  3. Rub the marinade evenly over both chicken breasts, ensuring they are fully coated.
  4. Place the chicken breasts on the grill and cook for about 6-8 minutes per side, or until they reach an internal temperature of 165°F (74°C). Remove from the grill and let rest for 5 minutes before slicing into thin strips.
  5. Prepare the base of the burrito bowls by evenly dividing cooked rice into serving bowls.
  6. Top each bowl with black beans, corn kernels, diced tomatoes, avocado slices, shredded cheddar cheese, and chopped cilantro.
  7. Add the grilled chicken strips to each bowl, arranging them on top of the other ingredients.
  8. Finish each bowl with a dollop of sour cream and a wedge of lime for squeezing over the top.
  9. Serve immediately and enjoy!

Notes

Feel free to customize the toppings based on your preferences. You can substitute brown rice for quinoa or add hot sauce for extra spice.
