Method
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the cooked spinach, crumbled feta cheese, grated Parmesan, salt, and black pepper. Mix well.
- Roll out the thawed puff pastry sheet on a lightly floured surface.
- Spread the spinach and cheese mixture evenly across the puff pastry, leaving a small border around the edges.
- Starting from one end, tightly roll the puff pastry into a log. Brush the beaten egg along the seam to seal it.
- Using a sharp knife, slice the log into 1/2-inch thick pinwheels and place them on the prepared baking sheet.
- Brush the tops of the pinwheels with the remaining beaten egg to create a golden finish.
- Bake in the preheated oven for 18-20 minutes, or until the pinwheels are puffed and golden brown.
- Remove from the oven and allow them to cool for a few minutes before serving.
Notes
You can substitute feta cheese with goat cheese for a different flavor. Ensure the puff pastry is fully thawed before rolling.
